Bahama Mama
Serves 1 · 5 minutes · Collins or hurricane glass
Last updated 1 November 2026

This Liquor.com version combines coconut rum, dark overproof rum and coffee liqueur with pineapple and lemon. Coffee is a distinctive part of this specification; it is not the orange-and-grenadine version sometimes served under the same name.
Ingredients
- — 30ml coconut rum (21% ABV assumed)
- — 30ml dark overproof rum (57% ABV assumed)
- — 15ml coffee liqueur (20% ABV assumed)
- — 75ml pineapple juice
- — 22.5ml fresh lemon juice
- — Ice cubes
- — Pineapple wedge and cocktail cherry, optional garnish
Method
- Chill the glass. Measure the coconut rum, overproof rum, coffee liqueur, pineapple juice and fresh lemon into a shaker.
- Fill the shaker with ice, seal and shake for 10–15 seconds until cold.
- Strain over fresh ice into the glass. Add a washed pineapple wedge and cherry if using, and serve promptly.
The classic vs the spiced version
The main drink follows Liquor.com’s five-ingredient version with rounded metric conversions. For a Dilay adaptation, replace the 30ml dark overproof component with 30ml Dilay at 40%, not an extra pour. That changes the base strength and spice character; the coconut rum and coffee liqueur remain separate ingredients.
Tips for getting it right
- — Coconut rum is a flavoured alcoholic product, not coconut cream. Its strength can be much lower than ordinary rum; count the actual label.
- — Overproof is not one fixed ABV. This calculation assumes 57%, not 75.5%; a stronger bottle increases the units.
- — Coffee liqueur is alcoholic and sweetened. Keep it measured; adding orange or grenadine would make a different recipe.

Frequently asked questions
Does a Bahama Mama contain coffee?
This published version contains 15ml coffee liqueur. Recipes under the same name vary, so coffee is part of this version rather than a rule for every bar.
Can coconut cream replace coconut rum?
Not directly. Coconut rum is alcoholic; cream changes texture, sweetness and strength. Treat that as a separately balanced adaptation.
Dilay 1949 is our own spiced rum, for sipping as well as mixing. Any substitution described above is a maker’s adaptation, not part of the credited specification.

Approx. 2.64 UK units per serving from the measured alcoholic ingredients. Where a source gives US fluid ounces, our rounded conversion uses 30ml per ounce. Stated strengths are calculation assumptions, not verified specifications for every bottle. Bitters use an explicit house measure of 1ml per dash, not a universal dash conversion. Check all labels; dilution does not remove alcohol.
