    Rum Fizz

    ◆ THE RECIPE ◆
Illustration of a Rum Fizz cocktail

Rum Fizz belongs to the same sour-and-soda family as a Collins, and names overlap between publishers. Here the light-rum proportions come from Absolut Drinks; our no-serving-ice presentation gives a short, freshly shaken fizz rather than another copy of the tall Collins.

    Ingredients

    • — 45ml light rum (40% ABV assumed)
    • — 30ml fresh lemon juice
    • — 20ml simple syrup (1:1; house concentration)
    • — 60ml chilled soda water (house top-up starting measure)
    • — Ice cubes for shaking only
    • — Lemon zest, optional garnish

    Method

    1. Chill a small tall tumbler. Measure rum, lemon and syrup into a shaker.
    2. Fill with ice and shake hard for 10–15 seconds to chill and aerate.
    3. Strain into the chilled glass without serving ice. Add 60ml chilled soda slowly and stir once gently; leave room for fizz.
    4. Add optional lemon zest and serve immediately. Do not shake the carbonated soda in a sealed shaker.

The classic vs the spiced version

The 45ml rum, 30ml lemon and 20ml syrup structure follows Absolut’s published Rum Fizz. Soda volume, syrup concentration and no-serving-ice presentation are our choices, not an exact transcription. Replace the 45ml light rum with 45ml Dilay for a spiced variation. We do not claim these adaptations have been independently tasting-tested.

    Tips for getting it right

    • — Absolut lists soda as a top-up and serves over ice. Our 60ml starting measure and no-ice service are explicit house presentation changes.
    • — This is egg-free. Egg-white and cream fizzes are separate variations and are not required here.
    • — The 45/30/20 rum/lemon/syrup proportions are sharper than our Collins. Keep the syrup concentration consistent and adjust the next serving in small steps if needed.

    Frequently asked questions

Does a Rum Fizz need egg white?

No. This simple version uses rum, lemon, syrup and soda. Egg-white versions are separate adaptations.

How is it different from a Collins?

The families overlap. Our selected Collins has aged rum, rich syrup, bitters and serving ice; this house fizz uses light rum, simple syrup, no bitters and no serving ice.

Dilay 1949 is our own spiced rum, for sipping as well as mixing. Any substitution described above is a maker’s adaptation, not part of the credited specification.

Approx. 1.8 UK units per serving from the measured alcoholic ingredients. Where a source gives US fluid ounces, our rounded conversion uses 30ml per ounce. Stated strengths are calculation assumptions, not verified specifications for every bottle. Bitters use an explicit house measure of 1ml per dash, not a universal dash conversion. Check all labels; dilution does not remove alcohol.
