Jet Pilot is a citrus-and-spice tiki cocktail using three rums, including two overproof styles, with falernum, cinnamon, absinthe and bitters. This Difford’s-based batch is divided into two small drinks; the full blender mixture is not one modest serving.
Ingredients
- — 30ml overproof aged pot-still rum (57% ABV assumed)
- — 22.5ml overproof aged light-bodied rum (75.5% ABV assumed)
- — 22.5ml light gold rum (40% ABV assumed)
- — 15ml falernum liqueur (11% ABV assumed)
- — 7.5ml non-alcoholic cinnamon syrup
- — 15ml fresh pink grapefruit juice
- — 15ml fresh lime juice
- — 2ml absinthe (68% ABV assumed; house measure for two dashes)
- — 1ml Angostura bitters (44.7% ABV assumed; house measure for one dash)
- — 200g crushed ice (house starting weight)
- — Cocktail cherries, optional garnish
Method
- Set out two small glasses. Measure the three rums, falernum, cinnamon syrup, both juices, absinthe and bitters into an ice-rated blender. Use a graduated small measure for the absinthe.
- Mix briefly without ice. Add the crushed ice and pulse until combined and cold; stop the motor before opening or scraping.
- Divide all liquid and ice equally between the two glasses. Add optional cherries and serve without a float or flame.
The classic vs the spiced version
The liquids follow Difford’s version with house dash volumes. We portion it into two and use a practical ice weight. A Dilay adaptation replaces only the 22.5ml light gold rum, not either specified overproof component; it changes the recipe’s aromatics without adding rum on top.
Tips for getting it right
- — The overproof strengths are stated assumptions, not exact ABVs supplied by Difford’s style descriptions. A different bottle must be recalculated.
- — Absinthe is not interchangeable with a lower-strength anise spirit. Keep its 2ml measure explicit.
- — We omit the source’s optional xanthan and use a stated ice starting weight. Both servings together contain about 4.65 UK units at these assumptions.

Frequently asked questions
Why are there two servings?
The source-style mixture contains 75ml rum, including two overproof components, plus liqueur, absinthe and bitters. Our two-glass presentation splits the entire batch equally; the units below are per small glass.
Can I leave out absinthe?
You can as a variation, but it removes the anise note and changes the alcohol total. It is not the complete selected specification.
Dilay 1949 is our own spiced rum, for sipping as well as mixing. Any substitution described above is a maker’s adaptation, not part of the credited specification.

Approx. 2.33 UK units per serving from the measured alcoholic ingredients. Where a source gives US fluid ounces, our rounded conversion uses 30ml per ounce. Stated strengths are calculation assumptions, not verified specifications for every bottle. Bitters use an explicit house measure of 1ml per dash, not a universal dash conversion. Check all labels; dilution does not remove alcohol.
