Coquito
Serves 1 · 5 minutes + chilling · Small chilled tumbler
Last updated 24 October 2026
Coquito is a chilled Puerto Rican festive drink made with coconut, rum and, in many recipes, dairy. This egg-free, single-serving house adaptation is creamy and cinnamon-led; egg-free does not mean dairy-free or alcohol-free.
Ingredients
- — 30ml white rum (40% ABV assumed)
- — 25ml evaporated milk
- — 25ml coconut cream, stirred smooth
- — 25ml sweetened condensed milk
- — 1 small pinch ground cinnamon, plus a little to finish
Method
- Check all product labels and use clean equipment. Stir the coconut cream until evenly combined and measure it with the two dairy ingredients.
- Whisk or briefly blend the milk, coconut cream, condensed milk and pinch of cinnamon until smooth. Add the measured rum and mix again.
- Cover and refrigerate promptly for at least 30 minutes, until chilled. Keep the mixture refrigerated; rum does not replace chilled-food handling.
- Stir before pouring into one small chilled glass. Finish with a little cinnamon and serve without adding another measure of rum.
Why it works
Condensed milk contributes sweetness and body, evaporated milk lightens the concentrated ingredients, and coconut provides the distinctive base. Chilling matters to texture and safe handling. We make Dilay; its spice-led substitution is optional rather than a claim that the Puerto Rican original belongs to our brand.
Serving and Chilled Handling
Make only the amount you intend to serve, cover it and keep it cold. Our 30-minute chilling time is a serving instruction, not a preservation claim. Store homemade dairy mixtures conservatively under chilled-food guidance, rather than repeating claims that rum keeps coquito safe for weeks.
Food Standards Agency general advice is to keep chilled food at 0–5°C and ordinary leftovers for no more than 48 hours; that is not a coquito shelf-life study. Follow any shorter ingredient-label instructions. Do not leave a jug out throughout a gathering or pour leftovers back into the original containers.
Choosing the Rum
White rum gives a straightforward base without extra spice. Aged or spiced rum changes the drink's flavour; keep the 30ml measure and small serving rather than increasing the rum to compete with the condensed milk.
For guests avoiding alcohol, prepare a separate coconut-and-dairy drink without rum. Chilling and refrigeration do not remove alcohol from the rum version. Label alcoholic and alcohol-free drinks clearly and consider each guest's dairy and coconut allergies.
The classic vs the spiced version
BACARDÍ publishes an egg-free batch containing rum, evaporated milk, coconut cream and condensed milk. We use that ingredient structure with rounded single-serving proportions and a specified cinnamon pinch, not a claim to one definitive family recipe. Replace the 30ml white rum with 30ml Dilay only for a clearly labelled spiced adaptation. It adds cardamom and ginger to the coconut-and-dairy base.
Tips for getting it right
- — This is one small serving, not a glass to fill repeatedly from an unmeasured bottle. For four servings, multiply each liquid by four and divide the chilled mixture equally.
- — The evaporated and condensed milks contain dairy. Do not describe the finished cocktail as vegan even if the rum itself is vegan-friendly.
- — Coconut cream, coconut milk and sweetened cream of coconut are different products. Our version uses coconut cream with the separately sweetened condensed milk.
- — Use clean containers and keep at 0–5°C. Prepare close to serving, follow the shortest relevant opened-product instruction and do not rely on alcohol for a long shelf life.
- — There is no egg or vanilla extract in this specification. Adding alcohol-bearing extracts changes the units calculation; other family and producer recipes vary.

Frequently asked questions
Does coquito need eggs?
No. The BACARDÍ and GOYA recipes referenced here omit eggs, as does our house adaptation. Other recipes differ, so ask rather than assuming every coquito is egg-free.
Is coquito dairy-free?
Not this version: evaporated and condensed milk contain dairy. A plant-based substitution is a different recipe, and every product label still needs checking.
Can I keep coquito for weeks because it contains rum?
Do not assume that. Rum is not a substitute for refrigeration or validated storage guidance. Prepare close to serving, keep it chilled and follow ingredient-label and conservative chilled-food advice.
Can I use spiced rum?
Yes as a variation. Substitute the same 30ml measure and label it clearly. Dilay contributes cardamom-led spice but is not the source of the coconut, dairy or added cinnamon.
