A piña colada blends rum, pineapple and coconut into a chilled, creamy cocktail. White rum is the classic starting point; our optional spiced-rum substitution adds cardamom and ginger without changing the drink into a coconut-flavoured rum product.

## Ingredients

- — 50ml white rum (40% ABV for the units calculation)
- — 50ml fresh pineapple juice
- — 30ml coconut cream, stirred smooth
- — 80g crushed ice (our blending starting point)
- — A washed pineapple wedge, to garnish

## Method

1. Chill a large glass. Stir the coconut cream before measuring; check whether your product is sweetened, because coconut products are not interchangeable.
2. Put the rum, pineapple juice and coconut cream into a blender rated for crushing ice. Add the measured 80g crushed ice.
3. Blend in short bursts until smooth. Stop the motor before removing the lid or scraping the sides. If the mixture will not move, add a little cold water rather than overloading the blender.
4. Pour into the chilled glass and garnish with pineapple. Serve immediately, before the ice melts and the mixture separates.

## Why it works

Pineapple supplies fruit and acidity, coconut supplies body, and rum supplies the base-spirit character. Dilay is a first-party option for an aromatic variation, not our claim that spiced rum is the definitive classic choice. Keep the juice, coconut product and ice unchanged if comparing rum styles.

## Which Rum to Use

Begin with a white rum if you want the pineapple and coconut to lead. An aged white rum can introduce additional base-rum character without the colour of a golden bottle. Golden and spiced rums are valid variations, but they should not be described as identical to the white-rum classic.

There is no need for an extra rum float or an overproof bottle. Measure one 50ml rum portion for this serving. Bottle strength changes alcohol units even when the volume is unchanged.

## Make Ahead Without Losing the Texture

Chill the glass and juice, measure your ingredients and prepare the pineapple garnish ahead. Stir separated coconut cream before measuring it. Blend the cocktail only when ready to serve; a frozen drink stored at room temperature loses its texture.

For an alcohol-free pineapple-and-coconut drink, omit the rum and adjust the liquid balance separately. Do not present dilution or longer blending as removing alcohol from the rum version.

## The classic vs the spiced version

The International Bartenders Association specifies 50ml white rum, 30ml coconut cream and 50ml pineapple juice, blended with ice. We keep those liquid proportions and give an explicit ice starting weight. Replace the 50ml white rum with 50ml Dilay 1949 only for the spiced adaptation: its cardamom, ginger and black pepper change the character. The classic does not require dairy cream or a large addition of lime juice.

## Tips for getting it right

- — The 80g ice is our practical starting point, not a weight specified by the IBA. Blender power and ice size affect texture; do not pack the jug with extra ice by eye.
- — Coconut cream is concentrated coconut, while cream of coconut is usually a sweetened cocktail product. Coconut milk is thinner. Read the label and keep the chosen product consistent when comparing batches.
- — Taste the pineapple and coconut base before adding any syrup. This recipe has no separate sugar syrup; sweetened coconut products make a different balance.
- — For a shaken rather than blended variation, shake the liquid ingredients with ice and strain over fresh ice. The result is less slushy; it is a method variation, not the cited IBA blended method.
- — Keep opened coconut products refrigerated according to the packaging. Use washed garnish and clean equipment; do not leave a finished drink standing for later.

## Frequently asked questions

### Can I use coconut milk instead of coconut cream?

Yes as a substitution, but it usually makes a thinner drink. This recipe specifies coconut cream. Sweetened cream of coconut is another different product; check the label and adjust the balance rather than assuming the same result.

### Does a piña colada need lime juice?

Not in the main IBA specification. Its historical note permits a few drops to taste. A large measured lime addition makes a different variation.

### Can I make a piña colada with spiced rum?

Yes. Replace the 50ml white rum with the same measured amount of spiced rum and identify it as a variation. Dilay introduces cardamom-led spice; the drink still gets its coconut and pineapple from separately added ingredients.

### Is a piña colada dairy-free?

No dairy is required by this recipe, but check the coconut product and all garnish labels. Coconut can cause allergy even though it is not one of the nuts in the UK's regulated nut-allergen list; do not make an unconditional allergen-free claim.
