These three producer-published drinks put chilli in different places: infused honey, a flavoured rum and rim, or fresh jalapeño. Each has its own format, rather than being the same sour with a different garnish. This is a credited selection, not a set of recipes we have developed or tested. Follow the original publishers for their specifications and note the preparation gaps below. We make Dilay; we have not tested it in these drinks or claimed these recipes as ours. Here the chilli is carried by the honey, rather than simply being a tasting note in spiced rum. **Before making it:** The producer lists an infused honey but does not explain its chilli quantity, infusion time or preparation. This is a flavour reference, not a complete make-at-home recipe: ask the producer for the missing preparation details before attempting it. It is a stirred long drink: its chilli direction comes from the named flavoured rum and rim, not from adding fresh chilli to a standard white-rum recipe. **Before making it:** This is a US-market recipe with ounce measures. UK availability and the strength of the named bottle have not been confirmed here. This has deliberately added fresh chilli as well as ginger, unlike a ginger-beer highball whose warmth comes from the mixer alone. **Before making it:** The producer gives metric liquid measures but describes the jalapeño as ‘2 or more slices’. Slice size and pepper strength are not standardised, so this does not promise a repeatable heat level. Do not treat ‘or more’ as a challenge or add extra rum to balance heat. Wear food-safe gloves when cutting chillies and avoid touching your face or eyes. Ventilate if heating a chilli preparation. Do not use concentrated chilli extracts or turn a drink into a heat challenge.
